Ingredients

Rice

  • 2 cups cooked white or brown rice (use day-old rice for best texture)

Avocado

  • 1 large ripe avocado (choose creamy, soft avocados)

Eggs

  • 2 large eggs (cooked to your preferred doneness)

Seasoning

  • to taste pepper

Sauce & Seeds

  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame seeds
  • 2 tablespoons chopped scallions
  • to taste optional chili flakes or sriracha (for added heat)

Instructions 

  • Cook the rice and let it cool slightly if freshly made.
  • Cook eggs to your preferred doneness and season with salt and pepper.
