This creamy chicken and rice skillet is a quick and delicious one-pan meal perfect for busy weeknights. It combines tender chicken, flavorful rice, and a rich, cheesy sauce.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup long-grain rice, rinsed
  • 2 cups chicken broth choose Halal-friendly options
  • 1 cup heavy cream
  • 1 cup frozen peas or fresh, if available
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or any Halal-friendly cooking oil
  • to taste Salt and black pepper
  • 1 teaspoon dried thyme (optional)
  • 1/2 cup grated parmesan cheese (optional, for extra creaminess)

Garnish

  • Fresh parsley, chopped, for garnish

Instructions 

  • Heat oil in a skillet over medium heat and cook chicken until browned. Remove and set aside.
  • Sauté onions and garlic until fragrant. Add rice and cook for 2 minutes.
  • Pour in chicken broth, heavy cream, and thyme. Bring to a boil.
  • Reduce heat, add chicken back to the skillet, cover, and simmer for 15 minutes until rice is tender.
  • Stir in peas and parmesan cheese (if using). Garnish with parsley before serving.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
