A quick and delicious vegetarian pasta dish featuring creamy avocado sauce, fresh basil, and cherry tomatoes for a burst of flavor.

Ingredients

Pasta

  • 12 oz pasta (spaghetti, linguine, or your choice)

Avocados

  • 2 pieces ripe avocados, peeled and pitted

Garlic

  • 2 cloves garlic, minced

Lemon Juice

  • 2 tablespoons fresh lemon juice

Olive Oil

  • ¼ cup olive oil

Salt

  • ½ teaspoon salt (adjust to taste)

Black Pepper

  • ¼ teaspoon black pepper

Red Chili Flakes

  • ¼ teaspoon red chili flakes (optional)

Fresh Basil Leaves

  • ¼ cup chopped basil leaves (plus extra for garnish)

Cherry Tomatoes

  • 1 cup halved cherry tomatoes (optional)

Pine Nuts or Walnuts

  • 2 tablespoons pine nuts or walnuts (optional, for garnish)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and reserve ½ cup of pasta water.
  • Blend avocados, garlic, lemon juice, olive oil, salt, black pepper, and chili flakes until smooth.
  • Mix the avocado sauce with chopped basil in a large bowl.
  • Add hot pasta to the sauce, toss to coat, adding reserved pasta water to reach desired consistency. Fold in cherry tomatoes if using.
  • Serve immediately, garnished with extra basil and pine nuts or walnuts.

Notes

For a creamier sauce, add more reserved pasta water as needed.
