A quick and delicious vegetarian pasta dish featuring creamy avocado sauce, fresh basil, and cherry tomatoes for a burst of flavor.

Ingredients

Pasta

  • 12 oz pasta (spaghetti, linguine, or your choice)
  • 2 pieces ripe avocados, peeled and pitted
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 0.25 cup olive oil
  • 0.5 teaspoon salt (adjust to taste)
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red chili flakes (optional)
  • 0.25 cup fresh basil leaves, chopped (plus extra for garnish)
  • 1 cup cherry tomatoes, halved (optional)
  • 2 tablespoons pine nuts or walnuts (optional, for garnish)

Instructions 

  • Cook the pasta in salted boiling water until al dente, then drain and reserve ½ cup of pasta water.
  • Blend avocados, garlic, lemon juice, olive oil, salt, black pepper, and chili flakes until smooth.
  • Mix the avocado sauce with chopped basil in a large bowl.
  • Add hot pasta to the bowl, toss to coat, adding reserved pasta water if needed for desired consistency.
  • Gently fold in cherry tomatoes, then serve garnished with extra basil and pine nuts or walnuts.

Notes

For extra flavor, sprinkle with additional basil and nuts before serving.
