Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 packet (1 oz) chipotle seasoning
  • 1 tsp garlic powder
  • 0.5 tsp cumin
  • 0.25 tsp smoked paprika
  • 0.25 tsp onion powder
  • to taste Salt and pepper Salt and pepper
  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 red bell pepper, diced
  • 0.5 red onion, diced
  • 1 avocado diced
  • 0.5 cup chopped cilantro
  • for serving Lime wedges
  • as desired Your favorite salsa
  • optional Sour cream or Greek yogurt
  • optional Shredded cheese

Instructions 

  • Rub seasoned spices on chicken and cook in a skillet over medium-high heat for 6-8 minutes per side.
  • Let chicken rest, then shred or dice.
  • Prepare rice according to package instructions.
  • Dice vegetables and chop cilantro.
  • Assemble bowls with rice, chicken, beans, corn, vegetables, avocado, cilantro, lime, and toppings.
