Instructions
Whisk together cornstarch, chicken broth, soy sauce, and honey; set aside.
Cook diced chicken in 1 tbsp olive oil until browned, then remove.
Sauté vegetables in remaining oil until tender-crisp, then add ginger and garlic; cook 1-2 minutes.
Return chicken to skillet, add sauce, bring to boil, and cook 1 minute to thicken.
Top with sesame seeds and serve hot, optionally over rice.
Notes
For extra flavor, marinate chicken beforehand or add a splash of rice vinegar.
