A quick and flavorful chicken stir fry packed with colorful vegetables and a savory sauce, perfect for a weeknight dinner.

Ingredients

Protein

  • 3 pieces boneless chicken breasts (diced into 1 inch pieces)

Seasonings

  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp ground ginger
  • 2 tsp minced garlic

Vegetables

  • 2 cups broccoli florets (diced into bite size pieces)
  • 1/2 yellow bell pepper Yellow Bell Pepper (cut into 1 inch pieces)
  • 1/2 red bell pepper Red Bell Pepper (cut into 1 inch pieces)
  • 1/2 cup shredded carrots

Sauce and Seeds

  • 2 tbsp olive oil (divided)
  • 2 tbsp sesame seeds
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp honey

Instructions 

  • Whisk together cornstarch, chicken broth, soy sauce, and honey; set aside.
  • Cook diced chicken in 1 tbsp olive oil until browned, then remove.
  • Sauté vegetables in remaining oil until tender-crisp, then add ginger and garlic; cook 1-2 minutes.
  • Return chicken to skillet, add sauce, bring to boil, and cook 1 minute to thicken.
  • Top with sesame seeds and serve hot, optionally over rice.

Notes

For extra flavor, marinate chicken beforehand or add a splash of rice vinegar.
