These savory chicken muffins are quick to prepare and perfect for a healthy, portable meal or snack.
Ingredients

low fat milk (or milk alternative)

extra lean ground chicken breast

hot sauce

shredded carrot

garlic (minced)

finely chopped or grated sweet onion

freshly grated parmesan cheese (optional)

marinara sauce

grated cheddar or mozzarella cheese

finely chopped fresh parsley
Instructions
Preheat oven to 350°F (175°C). Line muffin tin or spray with nonstick spray.
Mix oats and milk; let sit for 3 minutes.
Combine ground chicken, oat mixture, hot sauce, carrot, garlic, onion, egg, cheese (if using), salt, and pepper. Mix well.
Divide mixture into muffin cups, filling 3/4 full. Bake 20 minutes, then top with marinara and cheese. Bake 5-10 more minutes until cooked through.
Cool briefly, garnish with parsley, and serve warm.
Notes
For extra flavor, add a sprinkle of cheese before baking.
