Delicious and easy chicken and rice wraps perfect for a quick lunch or dinner. Packed with flavorful ingredients and fresh cilantro.

Ingredients

Protein

  • 1.5 pounds chicken tenders
  • 3 tablespoons olive oil (used in parts)
  • 3 cups wild rice (already cooked)
  • 1 cup corn kernels
  • 1.5 cups shredded cheddar cheese

Wraps

  • 5 large flour tortillas
  • 1 tablespoon olive oil
  • Juice from half a lemon lemon juice
  • 2 cloves garlic (minced)
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Juice from one and a half limes lime juice
  • 1 teaspoon sugar

Herbs & Garnish

  • A small handful fresh cilantro, chopped

Instructions 

  • Cook chicken tenders in olive oil until browned and cooked through.
  • Mix cooked chicken with lime juice, lemon juice, garlic, cumin, salt, pepper, and sugar.
  • Warm the flour tortillas and fill with rice, chicken mixture, cheese, and cilantro.
  • Roll up the wraps tightly and serve.

Notes

For extra flavor, add a dollop of sour cream or salsa.
