A quick and delicious appetizer featuring fresh tomatoes, mozzarella, and basil on toasted baguette slices.

Ingredients

  • 4 pieces Roma tomatoes (diced)
  • 1/2 cup fresh mozzarella (pearls or chopped)
  • 1/4 cup fresh basil (chopped)
  • 2 tbsp extra virgin olive oil
  • to taste salt and black pepper
  • optional balsamic glaze (for drizzling)
  • 1 piece baguette (sliced into ½-inch pieces)
  • 2 tbsp olive oil (for brushing bread)
  • 1 clove garlic (peeled)

Instructions 

  • Preheat oven to 400°F (200°C). Slice baguette and place on a baking sheet.
  • Brush bread slices with olive oil and toast for 6–8 minutes until golden.
  • Rub toasted bread with peeled garlic clove.
  • Mix diced tomatoes, olive oil, salt, pepper, and basil; let sit for 5 minutes.
  • Top bread slices with tomato mixture and mozzarella. Drizzle with balsamic glaze if desired.

Notes

Use fresh, ripe tomatoes for the best flavor.
