  • 2 pieces ripe bananas
  • 0.5 cup brown sugar
  • 1 egg egg
  • 4 tablespoons unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup oats
  • 1 cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Instructions 

  • Preheat oven to 400°F (200°C) and grease a mini muffin pan.
  • Mash bananas in a bowl, then add sugar, egg, applesauce, and vanilla. Mix well.
  • Stir in oats, flour, cinnamon, baking powder, baking soda, and salt until combined.
  • Spoon batter into muffin pan and bake for 15-20 minutes until golden.
  • Let muffins cool before serving.

Use ripe bananas for best flavor and sweetness.
