Ingredients

Meat

  • 1 lb Ground Turkey
  • 1 tbsp Olive Oil
  • 2 tbsp Taco Seasoning
  • 1 can Black Beans (15-ounce can, rinsed and drained)
  • 1 cup Sweet Corn (frozen or canned)
  • 1 can Diced Tomatoes (15-ounce can, undrained)
  • 1.5 cups Shredded Cheese (Mexican blend or cheddar/Monterey Jack)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 piece Jalapeno (thinly sliced)
  • 1/4 cup Sour Cream

Salt and Pepper

Instructions 

  • Heat olive oil in a skillet, cook turkey until browned, then drain excess fat.
  • Add taco seasoning, diced tomatoes, black beans, and corn. Simmer for 5-7 minutes.
  • Sprinkle cheese over the mixture, cover, and cook until melted, about 2-3 minutes.
  • Remove from heat, top with cilantro, jalapenos, and sour cream. Serve immediately.
