Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 2 large eggs (at room temperature)
  • 1 cup buttermilk (at room temperature)
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup semi-sweet chocolate chips

Instructions 

  • Preheat oven to 375°F (190°C) and prepare muffin tin.
  • Mix dry ingredients in a large bowl.
  • Whisk eggs, buttermilk, oil, and vanilla in a separate bowl.
  • Combine wet and dry ingredients; fold in chocolate chips.
  • Divide batter into muffin cups, top with reserved chips, and bake 18-20 mins.
  • Cool muffins before serving.

Notes

Do not overmix the batter for tender muffins.
