These rich and chewy oatmeal bars combine dark chocolate and dates for a delicious treat that's easy to make and perfect for satisfying your sweet tooth.
Ingredients

0.5cupunsalted butter(at room temperature)
0.5cupgranulated sugar
0.25cuplight brown sugar(packed)
1largeegg(at room temperature)
2teaspoonsvanilla extract
1cupall-purpose flour
1cupold-fashioned oats
0.5teaspoonbaking soda
0.25teaspoonbaking powder
0.5teaspoonsalt
0.25teaspoonground cinnamon
6ouncesbittersweet or dark chocolate(coarsely chopped)
7Medjooldates(pitted and coarsely chopped (about ½ cup))
Optional Substitutes
0.5cupchopped dried figs or dried cherries(if dates aren’t preferred)
Instructions
Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
Cream butter, granulated sugar, and brown sugar until fluffy.
Add egg and vanilla; mix well.
In a separate bowl, combine flour, oats, baking soda, baking powder, salt, and cinnamon.
Mix dry ingredients into wet, then fold in chopped chocolate and dates.
Press batter into prepared pan and bake for 20 minutes. Cool before slicing.
