These rich and chewy oatmeal bars combine dark chocolate and dates for a delicious treat that's easy to make and perfect for satisfying your sweet tooth.

Ingredients

Dairy & Baking

  • 0.5 cup unsalted butter (at room temperature)
  • 0.5 cup granulated sugar
  • 0.25 cup light brown sugar (packed)
  • 1 large egg (at room temperature)
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 6 ounces bittersweet or dark chocolate (coarsely chopped)
  • 7 Medjool dates (pitted and coarsely chopped (about ½ cup))

Optional Substitutes

  • 0.5 cup chopped dried figs or dried cherries (if dates aren’t preferred)

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  • Cream butter, granulated sugar, and brown sugar until fluffy.
  • Add egg and vanilla; mix well.
  • In a separate bowl, combine flour, oats, baking soda, baking powder, salt, and cinnamon.
  • Mix dry ingredients into wet, then fold in chopped chocolate and dates.
  • Press batter into prepared pan and bake for 20 minutes. Cool before slicing.

Notes

Store in an airtight container for up to 3 days for best freshness.
