Ingredients

Nuts or Seeds

  • 1 cup Pecans or sunflower seeds (for nut-free option)
  • 0.5 cup Coconut (use unsweetened for less sugar)
  • 2 tablespoons Honey or maple syrup (for vegan option)
  • 2 tablespoons Olive Oil (can substitute with melted coconut oil)
  • 2 cups Fresh Strawberries or other berries (for variation)
  • 1 cup Greek Yogurt or dairy-free yogurt (for vegan preparation)
  • 0.25 cup Shredded Coconut (for garnish and extra texture)

Instructions 

  • Blend the nuts or seeds, coconut, honey or maple syrup, and olive oil until smooth.
  • Spread the mixture into a baking dish and freeze for 10 minutes.
  • Cut strawberries into small pieces and mix with yogurt.
  • Spoon the strawberry-yogurt mixture onto the frozen base and sprinkle with shredded coconut.
  • Freeze for an additional 30 minutes before serving.
