Ingredients

Lentils

  • 1 cup green or brown lentils (can substitute with canned lentils for quicker prep)
  • 1 medium cucumber (can swap with bell peppers or radishes)
  • 1 medium bell pepper (any colorful variety works)
  • 2 whole green onions (can substitute with regular onions)
  • 3 tablespoons lemon juice (freshly squeezed is best)
  • 2 cloves garlic (minced)
  • 3 tablespoons olive oil (extra virgin is preferred)
  • to taste salt
  • to taste pepper (freshly ground is preferred)
  • to taste chili flakes (optional)
  • 1/4 cup parsley (can be swapped with cilantro)
  • 1/4 cup mint (can substitute with basil)

Instructions 

  • Cook the lentils in boiling water until tender, then drain and let cool.
  • Chop the cucumber, bell pepper, green onions, parsley, and mint.
  • In a large bowl, combine cooked lentils with chopped vegetables.
  • Whisk together lemon juice, minced garlic, olive oil, salt, pepper, and chili flakes if using.
  • Pour dressing over the lentil mixture and toss to combine.
  • Serve immediately or chill for flavors to meld.
