A nutritious and flavorful rice bowl combining tender chicken, roasted sweet potatoes, and fluffy rice for a wholesome meal.

Ingredients

Protein

  • 1.5 lbs chicken breast (boneless, skinless)

Vegetables

  • 2 sweet potatoes sweet potatoes (cubed)

Grains

  • 2 cups cooked rice (opt for brown rice for extra fiber)

Oils & Condiments

  • 2 tbsp olive oil (substitute with avocado oil if desired)

Instructions 

  • Preheat oven to 400°F (200°C). Cube sweet potatoes, toss with 1 tbsp olive oil, salt, and pepper, then roast for 25-30 minutes.
  • While roasting, heat 1 tbsp olive oil in a skillet and cook chicken until no longer pink, about 6-7 minutes per side. Rest and slice.
  • Layer cooked rice, roasted sweet potatoes, and sliced chicken in bowls. Garnish with greens if desired.

Notes

For extra flavor, add your favorite herbs or a squeeze of lemon.
