A nutritious and flavorful rice bowl combining tender chicken, roasted sweet potatoes, and fluffy rice for a wholesome meal.
Ingredients

chicken breast (boneless, skinless)

sweet potatoes

cooked rice (opt for brown rice for extra fiber)

Instructions
Preheat oven to 400°F (200°C). Cube sweet potatoes, toss with 1 tbsp olive oil, salt, and pepper, then roast for 25-30 minutes.
While roasting, heat 1 tbsp olive oil in a skillet and cook chicken until no longer pink, about 6-7 minutes per side. Rest and slice.
Layer cooked rice, roasted sweet potatoes, and sliced chicken in bowls. Garnish with greens if desired.
Notes
For extra flavor, add your favorite herbs or a squeeze of lemon.
