A moist and flavorful loaf combining sweet dates and crunchy walnuts, perfect for a cozy treat.

Ingredients

Dates and Dry Ingredients

  • 2 cups chopped dates
  • cup butter, room temperature
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup brown sugar, firmly packed
  • 1 cup strong hot tea
  • teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground nutmeg
  • 2 large eggs, whisked
  • 1 cup Chopped walnuts

Instructions 

  • Place chopped dates in a bowl and add butter, salt, baking soda, and brown sugar. Pour hot tea over and cool.
  • Preheat oven to 350°F (175°C). Spray a loaf pan with non-stick spray.
  • Once cooled, stir in vanilla extract. Add flour, baking powder, nutmeg, and eggs; fold in dry ingredients.
  • Fold in chopped walnuts, transfer batter to pan, and top with extra walnuts if desired.
  • Bake for 50 minutes, test with a toothpick, and bake an additional 5 minutes if needed. Cool in pan for 10 minutes, then on a wire rack.

Notes

For extra flavor, top with additional walnuts or chopped dates before baking.
