Sauce

2cupsChicken broth

2cupsDairy free heavy cream
2cupsChopped spinach
8ozDairy free parmesan shredded
2tbspPasta water as needed
Instructions
Cook the pasta in boiling water until al dente, then drain and set aside, reserving some pasta water.
Toss chicken with seasonings, then sear in a skillet until cooked through. Remove and set aside.
Melt butter in the same skillet, add seasonings, then stir in flour and cook briefly. Add chicken broth and heavy cream, then whisk in spinach and simmer until thickened.
Stir in dairy free parmesan until melted, then toss in cooked pasta and chicken, adding pasta water if needed to thin the sauce. Serve immediately.
