Ingredients
Protein
1.5lbsboneless, skinless chicken breasts(about 3 medium breasts)
4cupsmixed vegetables(e.g., broccoli florets, sliced carrots, diced bell peppers)
8ozcream cheese(softened)
1cupchicken broth(low-sodium)
2cupsshredded cheddar cheese(divided)
1tspgarlic powder
1tsponion powder
1tspItalian seasoning
1/2tspsalt(or to taste)
1/4tspblack pepper(or to taste)
Instructions
Place chicken breasts in the crockpot and add mixed vegetables, cream cheese, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
Cook on low for 4 hours or until chicken is cooked through and vegetables are tender.
Shred the chicken with two forks and stir in 1 cup of shredded cheddar cheese until melted and creamy.
Sprinkle the remaining cheese on top and let it melt before serving.
Notes
For a thicker sauce, remove the lid during the last 30 minutes of cooking.
