A flavorful and crispy roasted cauliflower dish infused with garlic, Parmesan, and lemon, perfect as a side or snack.

Ingredients

Vegetables

  • 1 medium head cauliflower, cut into florets (about 8 cups)
  • 3 Tbsp. extra-virgin olive oil
  • 1.5 tsp. paprika
  • 0.75 tsp. kosher salt
  • 0.5 tsp. cracked black pepper
  • 3 cloves garlic, minced
  • 2 to 3 Tbsp. grated Parmesan cheese
  • 1/2 juice of lemon lemon juice
  • 2 Tbsp. finely chopped fresh parsley

Instructions 

  • Preheat oven to 450ºF (230ºC). Toss cauliflower florets with olive oil, paprika, salt, and pepper.
  • Arrange on a baking sheet and roast for 20-25 minutes until lightly charred and tender.
  • Sprinkle Parmesan and garlic over cauliflower and bake for 5 more minutes.
  • Spritz with lemon juice, garnish with parsley, toss, and serve.

Notes

For extra crispiness, broil for the last 2 minutes.
