Instructions
Season salmon fillets with salt, pepper, and Italian seasoning.
Heat olive oil and butter in a skillet over medium heat. Cook salmon until golden and cooked through, about 4-5 minutes per side. Remove and set aside.
In the same skillet, sauté garlic and sun-dried tomatoes for 1-2 minutes. Add chicken broth and heavy cream, simmer until slightly thickened.
Stir in Parmesan cheese, spinach, red pepper flakes, and basil. Cook until spinach wilts and sauce thickens.
Return salmon to the skillet, spoon sauce over, and cook for 2 minutes. Serve hot.
Notes
For a lighter version, use half-and-half instead of heavy cream.
