A rich and flavorful dish featuring tender salmon in a creamy sauce with sun-dried tomatoes and spinach, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 4 pieces salmon fillets (6-ounce each)

Seasonings

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Cooking

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic (minced)
  • 0.5 cup sun-dried tomatoes (chopped, oil-packed, drained)
  • 0.5 cup chicken broth
  • 1 cup heavy cream
  • 0.75 cup parmesan cheese (grated)
  • 2 cups fresh spinach
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh basil (chopped, optional)

Instructions 

  • Season salmon fillets with salt, pepper, and Italian seasoning.
  • Heat olive oil and butter in a skillet over medium heat. Cook salmon until golden and cooked through, about 4-5 minutes per side. Remove and set aside.
  • In the same skillet, sauté garlic and sun-dried tomatoes for 1-2 minutes. Add chicken broth and heavy cream, simmer until slightly thickened.
  • Stir in Parmesan cheese, spinach, red pepper flakes, and basil. Cook until spinach wilts and sauce thickens.
  • Return salmon to the skillet, spoon sauce over, and cook for 2 minutes. Serve hot.

Notes

For a lighter version, use half-and-half instead of heavy cream.
