A rich and comforting tomato soup with a creamy finish, perfect for a cozy meal.

Ingredients

Canned Tomatoes

  • 1 can 28-ounce canned tomatoes (crushed, whole, or diced) (Whole tomatoes give the best texture if you like to break them up by hand.)

Onion

  • 1 medium medium onion, diced (Yellow or sweet onions work well.)

Garlic

  • 2-4 cloves garlic, minced (Adjust to taste.)

Broth

  • 2 cups chicken or vegetable broth (Use low-sodium broth if preferred.)

Heavy Cream or Coconut Milk

  • 0.5 cup heavy cream or coconut milk (Coconut milk adds a subtle coconut note.)

Olive Oil

  • 2 tablespoons olive oil (For sautéing.)

Salt and Pepper

  • to taste Salt and freshly ground black pepper

Herbs for finishing

  • optional Fresh or dried basil, thyme, or parsley (For finishing.)

Instructions 

  • Heat olive oil in a large pot over medium heat and sauté diced onion until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Pour in the canned tomatoes and broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  • Use an immersion blender to puree the soup until smooth, then stir in heavy cream or coconut milk.
  • Season with salt and pepper, garnish with herbs if desired, and serve hot.

Notes

For a richer flavor, roast the tomatoes before adding them to the soup.
