Instructions
Heat olive oil in a large pot over medium heat and sauté diced onion until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Pour in the canned tomatoes and broth, bring to a boil, then reduce heat and simmer for 15 minutes.
Use an immersion blender to puree the soup until smooth, then stir in heavy cream or coconut milk.
Season with salt and pepper, garnish with herbs if desired, and serve hot.
Notes
For a richer flavor, roast the tomatoes before adding them to the soup.
