A hearty and nutritious soup combining fresh vegetables, lentils, and spices for a comforting meal.

Ingredients

Vegetables

  • 2 pieces carrots ((170g))
  • 0.5 piece onion ((80g))
  • 1 clove garlic
  • 2 pieces tomatoes, peeled and chopped ((200g))
  • 300 g washed lentils

Seasonings and oils

  • to taste Olive oil
  • to cover Water
  • 2 pieces bay leaves
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • to taste Black pepper
  • 1/2 piece lemon (Juice of 1/2 lemon)
  • optional Chili flakes ((optional))

Instructions 

  • Heat olive oil in a pot. Sauté chopped onion and minced garlic for 1 minute.
  • Add chopped carrots and cook for 2 minutes.
  • Stir in chopped tomatoes and cook until soft, about 2-3 minutes.
  • Add lentils and water to cover ingredients. Add bay leaves, paprika, salt, and pepper. Simmer until lentils are tender, about 30 minutes.

Notes

For extra flavor, add chili flakes or fresh herbs before serving.
