Instructions
Heat olive oil in a pot. Sauté chopped onion and minced garlic for 1 minute.
Add chopped carrots and cook for 2 minutes.
Stir in chopped tomatoes and cook until soft, about 2-3 minutes.
Add lentils and water to cover ingredients. Add bay leaves, paprika, salt, and pepper. Simmer until lentils are tender, about 30 minutes.
Notes
For extra flavor, add chili flakes or fresh herbs before serving.
