Instructions
Cook pasta according to package instructions. Drain and set aside.
Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add chopped sun-dried tomatoes and drained chickpeas; cook for a few minutes.
Stir in heavy cream (or coconut cream) and spinach; simmer until spinach wilts. Combine with cooked pasta, season with salt and pepper, and mix well.
Serve topped with grated Parmesan or nutritional yeast and garnished with fresh basil or parsley.
Notes
For a vegan version, use nutritional yeast instead of Parmesan.
