A delicious and creamy pasta dish featuring sun-dried tomatoes and chickpeas, perfect for a quick and satisfying meal.

Ingredients

Pasta

  • 8 oz Pasta (your choice)

Canned chickpeas

  • 1 can can Canned chickpeas, drained and rinsed

Sun-dried tomatoes

  • 1/2 cup cups Sun-dried tomatoes, chopped

Heavy cream or coconut cream

  • 1 cup cups Heavy cream or coconut cream

Garlic

  • 2 cloves Garlic, minced

Olive oil

  • 2 tablespoons Olive oil

Fresh spinach

  • 2 cups cups Fresh spinach

Parmesan cheese or nutritional yeast

  • to taste Parmesan cheese or nutritional yeast (for topping)

Salt and pepper

  • to taste Salt and pepper to taste

Fresh basil or parsley

  • for garnish Fresh basil or parsley for garnish

Instructions 

  • Cook pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add chopped sun-dried tomatoes and drained chickpeas; cook for a few minutes.
  • Stir in heavy cream (or coconut cream) and spinach; simmer until spinach wilts. Combine with cooked pasta, season with salt and pepper, and mix well.
  • Serve topped with grated Parmesan or nutritional yeast and garnished with fresh basil or parsley.

Notes

For a vegan version, use nutritional yeast instead of Parmesan.
