Instructions
Sauté diced onion and garlic in 1.5 tablespoons of olive oil until fragrant.
Add spinach, basil, and parsley; cook until wilted.
Stir in pistachios, lemon juice, mascarpone, and half of the cheese; season with salt and pepper.
Cook pasta until al dente; reserve 1 cup of pasta water.
Toss pasta with sauce, adding reserved water to loosen if needed; sprinkle with remaining cheese and garnish with basil leaves.
Notes
Use fresh herbs for the best flavor and adjust seasoning to taste.
