A delicious and creamy pasta dish featuring tender chicken, fresh spinach, and Parmesan cheese, perfect for a satisfying meal.

Ingredients

Pasta

  • 8 oz penne pasta

Chicken

  • 2 pieces boneless skinless chicken breasts (cut into pieces)

Dry ingredients

  • 3 tbsp all-purpose flour
  • 1 tbsp butter
  • 1 tbsp olive oil

Garlic and liquids

  • 4 cloves garlic (minced)
  • 0.75 cup chicken broth
  • 1 tsp lemon juice
  • 0.5 tsp Dijon mustard
  • 0.25 tsp Italian seasoning

Cream and cheese

  • 1 cup heavy cream
  • 5 oz fresh baby spinach
  • 0.5 cup freshly grated Parmesan cheese

Seasoning

  • to taste salt
  • to taste black pepper

Instructions 

  • Cook penne pasta in salted boiling water until al dente, then drain and reserve 1/2 cup pasta water.
  • Season chicken with salt and pepper, coat with flour, then cook in a skillet with butter and olive oil until golden and cooked through. Remove and set aside.
  • Add garlic, chicken broth, lemon juice, Dijon mustard, and Italian seasoning to the skillet. Simmer briefly, scraping browned bits.
  • Return chicken to the skillet, add heavy cream and spinach, and simmer until sauce thickens and chicken reaches 165°F.
  • Add cooked pasta, toss to coat, stir in Parmesan, and season to taste before serving.

Notes

For extra flavor, sprinkle additional Parmesan or fresh herbs before serving.
