Ingredients

Vegetables

  • 2 cups fresh spinach
  • 1 clove garlic (minced)

Dairy

  • 1/4 cup heavy cream
  • 2 tablespoons grated Parmesan cheese

Fats

  • 1 tablespoon butter

Eggs

  • 4 large eggs

Seasonings

  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Nutmeg

  • pinch nutmeg

Instructions 

  • Rinse spinach, chop roughly.
  • Heat butter, sauté garlic 30 seconds.
  • Add spinach, cook until wilted, then pour in cream and season.
  • Crack eggs over spinach, cover, and cook until whites are set.
  • Sprinkle Parmesan and nutmeg, serve immediately.
