Ingredients

Butter

  • 2 tablespoons butter

Vegetables

  • 0.5 cup finely chopped onion
  • 2 large garlic cloves (finely chopped)

Flour

  • 2 tablespoons all purpose flour

Liquids

  • 2 cups chicken stock (Reduced sodium)
  • 0.5 cup half and half (or whole milk)

Seasonings

  • 1 teaspoon Italian seasoning
  • 0.25 to 0.5 salt (to taste)
  • 0.25 teaspoon pepper powder
  • 0.125 teaspoon red pepper flakes

Seafood

  • 0.75 pound shrimp (peeled, deveined and patted dry)

Greens

  • 2 handfuls baby spinach

Cheese

  • 0.25 cup grated parmesan

Instructions 

  • Melt butter in a pot, sauté onion and garlic for 3 minutes.
  • Add flour and cook for 1-2 minutes, then stir in stock, half-and-half, seasonings, and red pepper flakes. Simmer until slightly thickened.
  • Stir in shrimp, spinach, and parmesan; cook until shrimp is opaque and spinach wilts, about 3-4 minutes. Serve hot.

Notes

Use fresh shrimp for best flavor and adjust seasoning to taste.
