Ingredients

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts chicken breasts

  • 1 teaspoon dried oregano
  • 8 ounces cremini or white mushrooms, sliced
  • 2 cups fresh baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup capers, drained
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Optional: pinch of crushed red pepper flakes crushed red pepper flakes (optional)

Instructions 

  • Heat olive oil in a skillet and season chicken with salt, pepper, and oregano.
  • Cook chicken until golden and cooked through, then set aside.
  • Sauté mushrooms, add garlic, then stir in tomatoes, capers, and spinach until wilted.
  • Pour in heavy cream and chicken broth, add Parmesan, and simmer until slightly thickened.
  • Return chicken to skillet, warm through, garnish with parsley and red pepper flakes if desired, then serve.

Notes

For a spicier kick, add more red pepper flakes or serve with a side of crusty bread.
