Instructions
Heat olive oil in a skillet and season chicken with salt, pepper, and oregano.
Cook chicken until golden and cooked through, then set aside.
Sauté mushrooms, add garlic, then stir in tomatoes, capers, and spinach until wilted.
Pour in heavy cream and chicken broth, add Parmesan, and simmer until slightly thickened.
Return chicken to skillet, warm through, garnish with parsley and red pepper flakes if desired, then serve.
