Instructions
Preheat oven to 200°C (400°F). Toss halved baby potatoes with olive oil, salt, and pepper, then roast for 25–30 minutes until golden and crisp.
Season chicken with salt and pepper. Sauté in olive oil until browned and cooked through. Remove and set aside.
Sauté minced garlic in the same pan for 1 minute. Add heavy cream, cream cheese, Dijon mustard, and herbs. Simmer 2–3 minutes.
Return chicken to the pan, coat with sauce, and heat for 2–3 minutes. Serve with roasted potatoes and garnish with parsley.
Notes
For extra flavor, sprinkle with additional fresh herbs before serving.
