A delicious and comforting dish featuring tender chicken in a creamy garlic sauce served over rice with broccoli and fresh parsley.

Ingredients

Main Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 4 cloves garlic (minced)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups cooked rice
  • 1 cup broccoli florets (steamed)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions 

  • Heat 1 tablespoon of olive oil in a skillet. Season chicken with salt and pepper, cook for 6-8 minutes until golden. Remove and set aside.
  • Add remaining olive oil, sauté garlic for 1 minute. Pour in chicken broth, simmer 2-3 minutes.
  • Stir in heavy cream and Parmesan, cook until thickened (3-4 minutes). Add Italian seasoning and cooked chicken, heat through 2-3 minutes.
  • Divide rice into bowls, top with chicken and sauce, add steamed broccoli, and garnish with parsley.

Notes

For a lighter version, use half-and-half instead of heavy cream.
