A delicious and comforting dish featuring tender chicken in a creamy garlic sauce served over rice with broccoli and fresh parsley.
Ingredients

boneless, skinless chicken breasts
(cut into bite-sized pieces)
Salt and pepper

chicken broth

heavy cream

grated Parmesan cheese

Italian seasoning

cooked rice

broccoli florets
(steamed)

chopped fresh parsley

Instructions
Heat 1 tablespoon of olive oil in a skillet. Season chicken with salt and pepper, cook for 6-8 minutes until golden. Remove and set aside.
Add remaining olive oil, sauté garlic for 1 minute. Pour in chicken broth, simmer 2-3 minutes.
Stir in heavy cream and Parmesan, cook until thickened (3-4 minutes). Add Italian seasoning and cooked chicken, heat through 2-3 minutes.
Divide rice into bowls, top with chicken and sauce, add steamed broccoli, and garnish with parsley.
Notes
For a lighter version, use half-and-half instead of heavy cream.
