Instructions
Add vegetables, parsley, and oil to a baking dish, then roast at 190°C for 40 minutes, stirring halfway.
Add chickpeas and cream cheese to roasted vegetables, mix until melted, then sprinkle with cheddar and bake for 15 minutes.
Notes
Feel free to add herbs or spices for extra flavor.
