Instructions
Cook pasta in boiling salted water until al dente, then reserve 1 cup pasta water and drain.
Season chicken with salt, pepper, and Italian seasoning; cook in olive oil until golden and cooked through. Set aside.
Sauté garlic in butter, then add milk, cottage cheese, and Italian seasoning; simmer until slightly thickened. Stir in Parmesan and seasonings.
Add spinach to sauce until wilted, then return chicken and pasta; toss to coat, adding reserved pasta water to reach desired consistency. Garnish and serve.
Notes
Adjust seasoning to taste and serve hot with extra Parmesan and parsley.
