Ingredients

Protein

  • 14 oz cooked and shredded chicken (rotisserie, poached, or leftover grilled)
  • 1.5 tsp Dijon mustard (or whole grain mustard)
  • 2 oz plain yogurt (unsweetened or Greek yogurt)
  • 4 oz mayonnaise (preferably Hellmann's or low-fat mayo)
  • 0.5 tsp dried dill (fresh dill or parsley can be used)
  • 1 oz Parmesan cheese (or nutritional yeast for dairy-free)
  • 2 green onions green onions (thinly sliced)
  • 0.5 carrot carrot (grated)
  • 1.5 oz spinach (roughly chopped)
  • 1 oz tomatoes (diced or cherry tomatoes)
  • 1 celery stalk celery (finely diced stalk)
  • 6 tortillas flour or whole wheat tortillas (or gluten-free tortillas)
  • 0.5 lemon lemon zest and juice (from 1/2 lemon or lime)
  • 1 pinch black pepper

Instructions 

  • Mix shredded chicken with mustard, yogurt, mayonnaise, dill, Parmesan, green onions, grated carrot, spinach, tomatoes, celery, lemon zest, lemon juice, and black pepper.
  • Divide the mixture evenly among the tortillas.
  • Roll up each tortilla to form wraps.
  • Slice in half if desired and serve immediately.

Notes

For a dairy-free version, substitute Parmesan with nutritional yeast and use dairy-free mayonnaise.
