Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts diced

Pasta

  • 12 ounces penne pasta

Oils & Fats

  • 2 tablespoons olive oil
  • 2 tablespoons butter

Seasonings

  • Salt and black pepper to season Salt and black pepper (to taste)
  • 4 cloves garlic minced
  • 1 small onion finely chopped
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon dried oregano

Canned Goods

  • 1 can 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste

Broth & Liquids

  • ½ cup chicken broth
  • ½ teaspoon salt (adjust to taste)

Dairy

  • ¾ cup heavy cream or cream cheese (for extra richness)
  • ½ cup freshly grated Parmesan cheese

Garnish

  • as needed Fresh basil or parsley (for garnish)

Instructions 

  • Cook penne pasta according to package instructions; drain and set aside.
  • Sauté diced chicken in olive oil until cooked through; remove and set aside.
  • In the same pan, sauté garlic, onion, red pepper flakes, and oregano until fragrant.
  • Add crushed tomatoes, tomato paste, chicken broth, and salt; simmer for 10 minutes.
  • Stir in heavy cream and Parmesan cheese; add cooked chicken and pasta, then toss to combine.

Notes

For a spicier kick, increase red pepper flakes or add a dash of hot sauce.
