A delicious and creamy pasta dish featuring ripe avocados, tender chicken, and fresh herbs, perfect for a quick and satisfying meal.

Ingredients

Pasta

  • 10 oz uncooked pasta of choice

Chicken

  • 2 cups cooked chicken breasts diced or shredded

Spices

  • 0.25 teaspoon red pepper flakes (optional)

Avocado

  • 1 large ripe avocado

Herbs

  • 0.25 cup fresh basil leaves
  • 0.25 cup fresh parsley leaves

Scallions

  • 2 green parts only scallions

Garlic

  • 2 large cloves garlic cloves (or 4 small)

Lemon Juice

  • 2 tablespoons lemon juice

Cheese

  • 0.25 cup grated parmesan cheese plus for serving

Olive Oil

  • 0.25 cup extra virgin olive oil

Salt & Pepper

  • 0.25 teaspoon sea salt or to taste
  • 0.25 teaspoon freshly ground pepper or to taste

Greens & Sides

  • as needed rocket leaves
  • as needed toasted sourdough
  • as needed roasted cherry tomatoes

Instructions 

  • Cook 10 oz of pasta in salted water until al dente, then drain and set aside, reserving ¾ - 1 cup of pasta water.
  • In a blender, combine avocado, basil, parsley, scallions, garlic, lemon juice, parmesan, olive oil, salt, and pepper. Blend until smooth.
  • Toss the cooked pasta with the avocado sauce, adding reserved pasta water as needed to loosen.
  • Serve topped with additional parmesan, rocket leaves, toasted sourdough, and roasted cherry tomatoes.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
