Instructions
Cook 10 oz of pasta in salted water until al dente, then drain and set aside, reserving ¾ - 1 cup of pasta water.
In a blender, combine avocado, basil, parsley, scallions, garlic, lemon juice, parmesan, olive oil, salt, and pepper. Blend until smooth.
Toss the cooked pasta with the avocado sauce, adding reserved pasta water as needed to loosen.
Serve topped with additional parmesan, rocket leaves, toasted sourdough, and roasted cherry tomatoes.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
