A delicious and nutritious bowl combining tender chicken, creamy avocado sauce, and fluffy rice, perfect for a quick and satisfying meal.

Ingredients

Rice

  • 1 cup uncooked jasmine or basmati rice

Chicken

  • 2 pieces boneless, skinless chicken breasts (about 1 pound total)

Avocado

  • 2 pieces ripe avocados

Olive Oil

  • 1 tablespoon extra virgin olive oil

Lime

  • 1 piece lime (for juice)

Seasonings

  • to taste salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Optional toppings

  • fresh cilantro, cherry tomatoes, black beans, corn, shredded cheese, hot sauce (for garnish and extras)

Instructions 

  • Rinse rice and cook with 2 cups water and a pinch of salt until water is absorbed, then let sit covered for 5 minutes.
  • Season chicken with salt, pepper, garlic powder, and paprika. Cook in a skillet with olive oil for 6-7 minutes per side until cooked through.
  • Let chicken rest, then slice into bite-sized pieces. Blend avocados with lime juice, salt, and water until smooth.
  • Assemble bowls starting with rice, add sliced chicken, drizzle with avocado sauce, and top with optional garnishes.
