A delicious and nutritious bowl combining tender chicken, creamy avocado sauce, and fluffy rice, perfect for a quick and satisfying meal.

Ingredients

Rice

  • 1 cup uncooked jasmine or basmati rice

Chicken

  • 2 pieces boneless, skinless chicken breasts (about 1 pound total)

Avocado

  • 2 pieces ripe avocados

Olive Oil

  • 1 tablespoon extra virgin olive oil

Lime

  • 1 piece lime (for juice)

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Optional toppings

  • as desired Fresh cilantro, cherry tomatoes, black beans, corn, shredded cheese, hot sauce (for garnish and extras)

Instructions 

  • Rinse rice and cook with water and salt until tender, about 15-20 minutes.
  • Season chicken with salt, pepper, garlic powder, and paprika; cook in a skillet with olive oil until golden and cooked through, about 6-7 minutes per side. Rest and slice.
  • Blend avocados with lime juice, salt, and a splash of water until smooth.
  • Assemble bowls with rice, sliced chicken, and drizzle with avocado sauce. Add optional toppings as desired.
