A fresh and creamy rice salad combining ripe avocados, cherry tomatoes, and a zesty lime dressing, perfect for a light meal or side dish.

Ingredients

Rice

  • 1 cup jasmine or basmati rice

Avocado

  • 2 ripe avocados diced

Lime

  • 1 lime juiced

Cherry Tomatoes

  • 1 cup halved

Red Onion

  • 1 small finely chopped

Cilantro

  • 0.25 cup chopped

Greek Yogurt or Vegan Alternative

  • 0.25 cup for dressing

Olive Oil

  • 1 tablespoon for dressing

Salt and Pepper

  • to taste

Jalapeño (Optional)

  • 1 finely chopped for added heat

Instructions 

  • Rinse rice until water runs clear; cook according to package instructions. Fluff and cool.
  • Mix Greek yogurt, lime juice, olive oil, salt, and pepper to make dressing.
  • Combine cooled rice, diced avocados, cherry tomatoes, red onion, and cilantro in a large bowl.
  • Pour dressing over salad and toss gently. Add jalapeño if desired. Serve immediately or chill.

Notes

For extra flavor, add more cilantro or a squeeze of lime before serving.
