Instructions
Preheat oven to 180°C (350°F). Grease an 8-inch baking dish or line with parchment.
Blend cottage cheese until smooth. In a bowl, beat eggs until frothy.
Mix pumpkin purée, blended cottage cheese, and vanilla into eggs. Add dry ingredients and mix until smooth.
Pour batter into prepared dish, smooth the top, and bake for 35–40 minutes until edges are golden and center is set.
Cool for 10–15 minutes, then serve warm or chilled with optional toppings.
