A creamy, high-protein pumpkin pie made with cottage cheese and keto-friendly sweetener, perfect for a healthy dessert or snack.

Ingredients

Pumpkin

  • 2 cups pumpkin purée (not pumpkin pie filling)

Dairy

  • 2 cups cottage cheese (2% or full-fat)
  • 4 large eggs

Dry ingredients

  • 2 tablespoons coconut flour (or cornstarch)
  • 1 cup granulated keto sweetener (like allulose, or monk fruit blend, to taste)
  • 2 tsp vanilla extract
  • 2 tsp pumpkin pie spice (or 1 tsp cinnamon + ¼ tsp nutmeg + ¼ tsp ginger + pinch of cloves)
  • Pinch salt

Optional toppings

  • whipped cream, crushed pecans, or a sprinkle of cinnamon

Instructions 

  • Preheat oven to 180°C (350°F). Grease an 8-inch baking dish or line with parchment.
  • Blend cottage cheese until smooth. In a bowl, beat eggs until frothy.
  • Mix pumpkin purée, blended cottage cheese, and vanilla into eggs. Add dry ingredients and mix until smooth.
  • Pour batter into prepared dish, smooth the top, and bake for 35–40 minutes until edges are golden and center is set.
  • Cool for 10–15 minutes, then serve warm or chilled with optional toppings.
