A nutritious and easy-to-make baked egg dish packed with cottage cheese and fresh spinach, perfect for a healthy breakfast or brunch.

Ingredients

Dairy and Eggs

  • 8 large eggs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 3/4 cup cottage cheese (2% or full-fat)
  • 1/2 cup shredded or shaved Parmesan cheese
  • 3 cups roughly chopped fresh spinach
  • 1/2 cup finely diced yellow onion or green onions

Instructions 

  • Preheat oven to 375°F (190°C). Spray a 9×9 inch baking dish with nonstick spray.
  • Whisk eggs, garlic powder, salt, and pepper until well combined.
  • Stir in cottage cheese, Parmesan, spinach, and onions until evenly mixed.
  • Pour mixture into the dish and bake for 30-35 minutes until set.
  • Let cool slightly, then slice and serve. Store leftovers in refrigerator up to 3 days.

Notes

For extra flavor, add herbs or spices as desired.
