A quick and healthy twist on classic chicken parmesan, packed with protein and flavor.

Ingredients

Protein

  • 6 oz cooked chicken breast, cubed
  • 0.5 cup low-fat cottage cheese
  • 0.25 cup marinara sauce, low sugar
  • 2 tbsp shredded mozzarella cheese
  • 1 tbsp grated parmesan cheese
  • 0.5 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.25 tsp crushed red pepper flakes

Instructions 

  • Mix cottage cheese, garlic powder, and oregano until blended.
  • Add chicken to the mixture and toss to coat.
  • Spread marinara sauce over the chicken mixture.
  • Sprinkle mozzarella and parmesan cheeses on top.
  • Microwave for 2-3 minutes until cheese melts.
  • Let stand 1 minute before serving.

Notes

Use fresh cooked chicken for best flavor.
