Meat

  • 1 lb ground turkey (a lean and flavorful protein)
  • 2 medium sweet potatoes (peeled and diced)
  • 2 medium zucchini (diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp smoked paprika (brings a warm, smoky flavor)
  • 1 tsp Italian seasoning (a blend of herbs)

  • 1 cup shredded cheese ((cheddar or mozzarella))
  • 1 tbsp olive oil (for sautéing)

Instructions 

  • Preheat oven to 400°F (200°C) and grease a baking dish.
  • Sauté onion and garlic in olive oil until fragrant, then add ground turkey and cook until browned. Drain excess fat.
  • Add diced sweet potatoes, zucchini, paprika, Italian seasoning, salt, and pepper; cook until veggies soften.
  • Spread mixture in baking dish, top with shredded cheese, and bake for 25-30 minutes until golden and bubbly.
  • Let cool briefly, garnish with parsley if desired, and serve.
