Ingredients

Dried Noodles

  • 1 pound dried noodles such as spaghetti, linguine, or lo mein noodles
  • 0.25 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup for vegan
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons tahini sesame paste
  • 2 tablespoons water

Chopped scallions, for garnish

Toasted sesame seeds, for garnish

Instructions 

  • Cook noodles according to package, rinse with cold water, and drain.
  • Whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and red pepper flakes.
  • Mix tahini and water until smooth, then combine with the soy sauce mixture.
  • Add cooled noodles to the sauce and toss to coat evenly.
  • Divide noodles into bowls, garnish with scallions and sesame seeds, and serve immediately or chill before serving.

Notes

For a colder dish, chill in the refrigerator for at least 30 minutes before serving.
