Instructions
Poach the chicken breast in boiling water with ginger and scallion for 22-25 minutes, then shred.
Prepare the sauce by mixing sugar, sesame oil, garlic, rice vinegar, soy sauce, chili oil, and salt.
Cook noodles according to package instructions, rinse under cold water, and toss with 1-2 teaspoons oil to prevent sticking.
Combine noodles, shredded chicken, julienned cucumber, bean sprouts, chopped peanuts, scallion, and cilantro. Pour sauce over and toss.
Notes
Use fresh ingredients for best flavor and adjust chili oil to your heat preference.
