Ingredients

Chicken

  • 1.5 lbs boneless, skinless chicken thighs (cut into 2-inch strips)
  • 0.25 cup olive oil
  • 3 cloves garlic (minced)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp smoked paprika
  • 0.5 tsp turmeric powder
  • 0.25 tsp cayenne pepper (optional, for heat)
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Creamy Garlic Sauce

  • 0.5 cup mayonnaise (good quality)
  • 2 cloves garlic (minced very fine or grated)
  • 1 tbsp fresh lemon juice
  • 2 tbsp water
  • Pinch salt (to taste)

Sandwich Components

  • 4 large pita breads or flatbreads (warmed)
  • 0.5 cup shredded lettuce
  • 0.5 cup diced tomatoes
  • 0.25 cup thinly sliced red onion
  • 0.25 cup chopped fresh parsley (optional)
  • 0.5 cup pickles (dill or Persian style, sliced, for serving)

Instructions 

  • Marinate chicken with olive oil, garlic, lemon juice, cumin, coriander, paprika, turmeric, cayenne, salt, and pepper. Cook until browned.
  • Prepare creamy garlic sauce by mixing mayonnaise, minced garlic, lemon juice, water, and salt. Set aside.
  • Warm pita breads and assemble sandwiches with cooked chicken, lettuce, tomatoes, red onion, parsley, and pickles. Drizzle with garlic sauce.

Notes

For extra flavor, marinate the chicken longer and toast the pita for added texture.
