A hearty and flavorful beef casserole perfect for comforting dinners. Tender beef combined with vegetables in a rich sauce makes this dish a family favorite.
Ingredients
Olive oil cooking spray
900gbraising steak, cubed
2piecesonions, roughly chopped
3clovesgarlic, sliced
3piecescarrots, roughly chopped
300gbutternut squash, peeled and cubed
3tbsptomato puree
2tbspsweetener (e.g., Sukrin Gold or brown sugar)
1tspsalt
pinchground cloves
360mlbeef stock
3tbspbalsamic vinegar
1tbspsoy sauce or Tamari
2tbspflat leaf parsley, chopped(for garnish)
salt and pepper
Instructions
Preheat oven to 160°C. Season beef with salt and pepper, then brown in batches over high heat using spray oil. Deglaze pan with a splash of stock.
Add vegetables, bay leaf, cinnamon, salt, and sweetener. Stir in tomato paste, stock, vinegar, and soy sauce. Simmer briefly.
Return beef to the dish, cover, and cook in the oven for 1.5 hours until tender. Remove bay leaf and cinnamon stick.
Check seasoning, garnish with parsley, and serve hot.
Notes
For a thicker sauce, simmer uncovered for a few extra minutes before serving.
