A hearty and flavorful beef casserole perfect for comforting dinners. Tender beef combined with vegetables and rich seasonings make this dish a family favorite.

Ingredients

Oil

  • 900 g braising steak, cubed
  • 2 pieces onions, roughly chopped
  • 3 cloves garlic, sliced
  • 3 pieces carrots, roughly chopped
  • 300 g butternut squash, peeled and cubed
  • 3 tbsp tomato puree
  • 2 tbsp sweetener (e.g., Sukrin Gold or brown sugar)
  • 1 tsp salt
  • pinch ground cloves
  • 360 ml beef stock
  • 3 tbsp balsamic vinegar
  • 1 tbsp soy sauce or Tamari
  • 2 tbsp flat leaf parsley, chopped

Salt and pepper

Instructions 

  • Preheat oven to 160°C (320°F). Season beef with salt and pepper.
  • Brown beef in a hot casserole dish with oil, then set aside.
  • Deglaze the pan with a splash of stock, then add vegetables, spices, tomato paste, stock, vinegar, and soy sauce. Return beef to the dish and simmer.
  • Cover and cook in the oven for 1.5 hours until beef is tender. Remove bay leaf and cinnamon stick, then season to taste.
  • Garnish with chopped parsley and serve hot.

Notes

For extra flavor, let the casserole rest for 10 minutes before serving.
