A hearty and flavorful beef casserole perfect for comforting dinners. Tender beef combined with vegetables and rich seasonings make this dish a family favorite.
Ingredients
Oil
900gbraising steak, cubed
2piecesonions, roughly chopped
3clovesgarlic, sliced
3piecescarrots, roughly chopped
300gbutternut squash, peeled and cubed
3tbsptomato puree
2tbspsweetener (e.g., Sukrin Gold or brown sugar)
1tspsalt
pinchground cloves
360mlbeef stock
3tbspbalsamic vinegar
1tbspsoy sauce or Tamari
2tbspflat leaf parsley, chopped
Salt and pepper
Instructions
Preheat oven to 160°C (320°F). Season beef with salt and pepper.
Brown beef in a hot casserole dish with oil, then set aside.
Deglaze the pan with a splash of stock, then add vegetables, spices, tomato paste, stock, vinegar, and soy sauce. Return beef to the dish and simmer.
Cover and cook in the oven for 1.5 hours until beef is tender. Remove bay leaf and cinnamon stick, then season to taste.
Garnish with chopped parsley and serve hot.
