Ingredients

Liquid ingredients

  • 1 cup orange juice
  • 1/2 cup coconut oil, warmed
  • 1/2 cup firmly packed brown sugar

Dry ingredients

  • 2 cups white whole-wheat flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup dark chocolate, coarsely chopped

Instructions 

  • Preheat oven to 350°F (175°C) and spray muffin pan.
  • Mix orange juice, coconut oil, and brown sugar until well combined.
  • Whisk together flour, oats, salt, baking powder, baking soda, cocoa, and cinnamon.
  • Combine dry ingredients with wet mixture, then fold in chopped chocolate.
  • Divide batter into muffin cups and bake for 18-20 minutes. Cool on wire rack.

Notes

For extra flavor, add a pinch of orange zest to the batter.
