Delicious Chinese-style beef rolls wrapped in crispy green onion pancakes, perfect for a flavorful meal.

Ingredients

Spices and Aromatics

  • 3 pieces star anise
  • 1 stick cinnamon
  • 1 Tbsp fennel seed
  • 6 dried chilies (optional) dried chilies (optional)
  • 1 Tbsp whole sichuan peppercorn
  • 1 Tbsp whole white peppercorn
  • 1 Tbsp vegetable oil

Main Protein

  • 2 lbs beef shank (cleaned and trimmed of excess fat)
  • 5 cloves garlic (smashed)
  • 1 knob ginger (smashed)

Vegetables

  • 2 green onions green onions (sliced 3" lengthwise)
  • 2 Thai chilies (optional) fresh Thai chilies (optional)
  • 1/2 tsp 5-spice powder
  • 1/2 tsp coriander powder
  • 1 Tbsp dou ban jiang (broad bean paste) (omit if you don't like spicy)
  • 4 C beef broth or water
  • 1/4 C soy sauce
  • 1 Tbsp dark soy sauce
  • 1 1/2 Tbsp rock sugar (or granulated sugar)

Dough for Pancakes

  • 2 C all-purpose flour
  • 1 C hot boiling water
  • 2-3 stalks green onions (chopped)
  • 2 Tbsp sesame oil
  • salt salt
  • 3-4 Tbsp oil for frying
  • 1/2 cucumber julienned cucumber
  • handful cilantro leaves
  • 4 Tbsp hoisin sauce

Instructions 

  • Prepare the beef shank with spices and aromatics in the Instant Pot, then cook until tender.
  • Mix flour and hot boiling water to form a dough, then roll into thin pancakes.
  • Cook the pancakes in a skillet with sesame oil until golden and crispy.
  • Slice the cooked beef and assemble rolls with pancakes, cucumber, cilantro, hoisin, and green onions.
  • Serve the beef rolls with dipping sauce and garnishes.

Notes

For extra flavor, marinate the beef overnight before cooking.
